I am always looking for ways to feed my family a wholesome breakfast, with just a few minutes of prep. I feel like healthier choices are just so time consuming, and we are often rushed in the mornings.
That is, until I tried the Kiolbassa Breakfast Links and Dry Cured Bacon. The breakfast links are fully cooked, so you just have to heat and eat! The bacon has no water added, so the bacon does not shrink or splatter like average bacon brands! It is super simple to cook up, and you can prepare it ahead of time for that easy create-your-own breakfast taco.
INGREDIENTS TO MAKE THESE BREAKFAST TACOS:
- ½ pack, kielbasa or regular sausage
- ½ pack, bacon
- 6 corn tortillas
- 4 eggs
- ½ green pepper, chopped
- ½ cup, shredded cheese
- Optional, for topping: ¼ cup, salsa
HOW TO MAKE BREAKFAST TACOS:
- In one skillet, scramble eggs and green pepper together. In another, cook up the bacon, drain the fat, and then heat up the sausage. (Optional: after removing sausage from skillet, use it to heat up the tortillas)
- Layer ingredients onto corn tortillas to build tacos! Serve with additional salsa or other taco toppings.
It is so simple to have a healthy, filling breakfast in the mornings. On the weekends, I cook up a large batch of scrambled eggs with peppers, plus a pack of bacon and sausage. Chop up the meats, pop into the fridge, and you’re all ready for tacos!
Each weekday morning, I heat up the eggs and meats, and the kids just fill their own tortillas. If they are old enough to use the microwave, they really can make their own breakfast. If not, you can just help the little ones warm it all up! Kids will love choosing their own toppings.
