Looking for an easy, family-friendly keto recipe for quick weeknight dinners? These Keto Steak Fajita Bowls are a delicious dinner made simple with tools from the new subscription box, Special Delivery from Taste of Home.
Guys, if there’s anything I love as much as an easy recipe, it’s fun mail. I just received the Special Delivery box from Taste of Home, and I’m so excited to share it with you, my fellow foodies!
Inside each box is a curated collection of must-have cooking tools to help YOU feel more confident in the kitchen. From spices to herbs to recipe cards, this box is packed with fun gifts for the home cook. Plus, you get a gorgeous cookbook with the best recipes from Taste of Home. I just love to sit and page through a new cookbook with a cup of coffee in hand. How about you?
I was thrilled to get the GIR Skinny Spatula and OXO Good Grips Microplane Zester in this box, as they are both totally versatile tools! An at-home cook can always use a high quality spatula and this microplane will be great for finely grated nutmeg during the upcoming holiday season as well as zesting all kinds of citrus to boost the flavor of everyday meals!
I grabbed my new kitchen tools and got working on a new recipe we’ve been enjoying in our home– Keto Steak Fajita Bowls. It’s a keto-friendly dish that’s full of flavor and packed with nutrients!
First off, stir up the lime marinade. Next slice the skirt steak and veggies (bell peppers and onions) and lay it all out on a sheet pan. Spread the marinade all over the pan with the GIR Skinny Spatula.
Cook in the oven at 400 degrees for 15-20 minutes or until the steak and veggies are cooked through and just tender. Finish off by zesting lime all over the dish, with the OXO Good Grips Microplane Zester.
To put a keto twist on fajitas, we use cauliflower rice! You can certainly make your own with a food processor, but I bought a pre-chopped bag to make the meal quick & easy. Heat up the “rice” and use it as the base for your bowl.
Add the fajita ingredients on top and finish off with any Tex Mex-inspired toppings! We love lime, avocado, cilantro, and sour cream, just to name a few. Keep it keto-friendly or not, depending on what your family enjoys!
