It just isn’t summer without fresh, juicy watermelon. I cut up slices for snacking all day long. And it’s delicious in all sorts of recipes, like smoothies, side dishes, and salads… like this one!
As a runner (and a busy mom!) I’m big on hydration for feeling my best. I love adding watermelon to dishes, especially this salad, which is a summer favorite of mine.

Slice it up into chunks and enjoy! Did you know the entire watermelon is edible. That’s right- flesh, rind, and all!
For my Watermelon, Radish, and Feta Salad, start with a base of spring greens. Top with watermelon chunks, sliced radishes, and feta crumbles. Finish off with fresh, cracked pepper, and a drizzle of olive oil vinaigrette dressing if you want!
So simple & so delicious. I love to take it on-the-go, and enjoy a refreshing, filling salad that gives me energy for the afternoon!

I love easy meals to take on-the-go, it keeps me active with my girls. Wherever life takes me, I’m ready with a delicious lunch with all the flavors of the season.
- 4 cups spring greens
- 2 cups watermelon, chunks
- 1 cup radishes, thinly sliced
- 1/2 cup feta cheese, crumbles
- sprinkle fresh, cracked pepper, optional
- 1 tbsp olive oil vinaigrette dressing, optional
- Divide up spring greens onto 2 plates/bowls.
- Add watermelon chunks.
- Add radish slices.
- Sprinkle feta cheese on both.
- Add pepper and drizzle of dressing if desired.
