With two kids in school (and all the daily activities), I’ve been relying on quick and easy meals to serve my family every night. I have a go-to list of simple dinner ideas that are a hit every time, and this is our latest success. So flavorful!
It’s a delicious fusion of two of our favorite meals– pasta and tacos. I love that you can add as many fresh toppings as you like. It’s a simple base with all the yummy flavorful add-ons that your family loves.
Start with Barilla Spaghetti, it’s always al dente, always perfect. Boil according to the package instructions, and top with tomato sauce and chopped chorizo sausage.
I like to do a thinner sauce for this dish, to really let the toppings shine. Just mix up chicken broth with tomato paste for a delicious sauce that pairs well with the chorizo.
Add the taco toppings! A few ideas:
- romaine lettuce
- diced onion
- chopped tomatoes
- chopped avocados
- a dollop of sour cream (or Greek yogurt for added protein!)
- shredded Cheddar cheese
- fresh lime juice
Let your family make a pasta dish they love! I usually serve the pasta with sauce and chorizo, and everyone tops it however they please. It’s a simple dinner that everyone enjoys.
Taco Pasta with Chorizo
- 1 box Barilla Spaghetti
- 2 cups chicken broth
- 1 can tomato paste
- 1 lb chopped chorizo sausage
- 1/4 cup shredded Cheddar cheese
- 1 cup chopped romaine
- 1/4 cup chopped tomatoes
- 1/2 cup diced avocado
- 1/4 cup diced onion
- 1/2 cup sour cream (or Greek yogurt)
Boil pasta according to package instructions.
Meanwhile, heat up chorizo in a skillet on medium-low heat and mix chicken broth & tomato paste in a heated pot.
Drain pasta, top with sauce and chopped chorizo.
Top pasta with preferred taco toppings.
