I love to use potatoes in my everyday meals. They are a busy parents’ best friend, for sure. They are simple for both new and veteran cooks to use in recipes, and they offer unlimited possibilities for quick, delicious meals.
Not only are potatoes convenient to have on hand in the pantry, but they are full of wholesome nutrients! When I cook with potatoes, I love to leave the skin on, as it adds both texture and nutrients.
They also compliment any flavor you add to them. In this case, I added herbed cream cheese to instantly create a yummy side dish full of flavor and nutrients. It’s a little cooking hack that I love to use when I need a side dish fast.
Boil the petite potatoes until soft, drain the water, and add the cream cheese. Mix with a potato masher or large spoon until you reach the desired consistency.
Can you believe that’s only a couple of ingredients?! Petite potatoes and herbed cream cheese. That’s it!

- 1 lb petite potatoes
- 8 oz herbed cream cheese
- Boil petite potatoes in pot of water for 10-15 minutes, or until tender.
- Drain potatoes, add to large bowl.
- Add cream cheese, mix with potato masher to desired consistency.
- Serve and enjoy!
