Overnight Breakfast Oats
If you’ve been reading my blog lately, then you’ve heard about my goal to eat a better breakfast.
I generally hit the ground running first thing in the morning (not literally), and by the time I do some work, get everyone ready for the day, make lunches, and do school drop-off— I’m starving and reaching for a bag of cookies.
It’s simply not good to run on empty for half the day, so I’m determined to get some good, wholesome food into my body so I can continue that momentum throughout my day.
INGREDIENTS NEEDED TO MAKE THESE OVERNIGHT BREAKFAST OATS:
- 1/4 cup of old fashioned oats
- 1/4 cup of International Delight Simply Pure Coffee Creamer in Hazelnut
- 1 Tbs unsweetened cocoa powder
- 1/2 cup of plain, non-fat Greek yogurt
- 1/8 tsp Salt
- 1/4 tsp vanilla extract
- 2 Tbs protein powder, chocolate flavor
- Stir all ingredients until completely mixed together.
- Use this perfectly sized cookie scoop (which will minimize mess) to fill adorable, covered jars – that are perfect for storage and serving!
- Enjoy in the morning, keeps for 3 days.
I’ve discovered two tricks that help me to make better food choices in the morning: make it the night before & make it tasty. Let’s face it– if it’s better for me, but tastes bland, I’m not going to eat it. And then what’s the point?
So I thought I would try out an overnight oat recipe, but add my own tasty spin, with hazelnut creamer and cocoa powder. Who can resist brownie batter?! Not me!
Such a simple recipe, but it makes for a delicious, wholesome breakfast.
It tastes so rich, but it’s full of wholesome ingredients. And it keeps me going all the way until lunch.
Mix it up in a big bowl, scoop into containers, and leave in refrigerator overnight. I like to use this large cookie scoop to minimize mess, and aren’t these mason jars fun!! In the morning, pop out to enjoy with a spoon. Some days, I’ll add a few chocolate chips or whipped cream as a little extra something. So much goodness in that jar, it’s totally cause for celebration.
Do you eat overnight oats hot or cold?
Either! If you pull the oats out of the fridge in the morning, they’ll be cold. But you can certainly heat them up.
Are overnight oats safe?
Perfectly safe! Just as with any food, some may feel that uncooked oats give them digestive issues, so keep that in mind if it might apply to you.
How long are overnight oats good for?
Overnight oats can be stored in an airtight container for up to five days in the refrigerator. The mixture will get softer the longer it sits.
I love how I can whip it up the night before, and it lasts until morning or even a few days later. Just a little bit of planning means a week of good, filling breakfasts for me.
