I’ve got the perfect pumpkin spiced treat for you guys today. It’s tasty, filling, and full of all kinds of good stuff. Your kids will be reaching for these as a delicious after school snack and you’ll love them as an on-the-go snack option.
Crunchy, chewy, lightly sweet… and tastes just like autumn spice. Stock up on Honey Nut Cherrios at Jewel-Osco and let’s do it.
Dates are your best friend when it comes to homemade energy bars. They’re full of fiber, mix well with other ingredients, and taste almost buttery after a whirl in the food processor. They are a key ingredient in this snack.
Next comes almond butter, which is a great source of protein, and helps to keep the bar together. Basically, it gives the bar it’s no-bake status. For crunch, flavor, and even more fiber, I added the Honey Nut Cherrios and sunflower seeds.
Of course, it wouldn’t be the perfect Fall snack bar without pumpkin puree and pumpkin pie spice. You owe it to your kitchen to get a jar of pumpkin pie spice. It shines in all sorts of dishes… pancakes, smoothies, oatmeal.
But today it makes granola bars taste like pumpkin pie, and you wouldn’t want to miss that.

- 8 ounces fresh dates, pits removed
- 1/4 cup almond butter
- 1/4 cup Honey Nut Cherrios cereal
- 1/4 cup sunflower seeds
- 2 tablespoons plain pumpkin puree
- 1 tablespoon pumpkin pie spice
Honey Nut Cherrios add a lightly sweetened crunch to these snack bars.
I purchased them at Jewel-Osco, where you can stock up on General Mills products, like Yoplait Greek 100 Vanilla—which is delicious with the No-Bake Bars. Just sayin’.
