See those Quaker Quick Oats up there? Yummy, fill-you-up fiber, disguised as streusel topping. I love to make special snacks for my kids to take to school, and muffins are at the top of the list. You can fill them with any wholesome (or not) ingredients that you want, and they taste like love.
Plus, at home, you can drizzle them with salted caramel and take it over the top.
Caramel simply should not exist without sea salt stirred in. The sweet & salty makes these muffins quite memorable.
I used a boxed spice cake mix and store-bought caramel sauce. Could I have made it all from scratch? OF COURSE. But then it wouldn’t be a quick ‘n easy way to make snacks your kids will devour. And let’s face it, you’d never make them that way. Who is stirring up homemade caramel on a weeknight? Not this blogger.
I picked up everything I needed to make these muffins at Jewel-Osco. While I was there, I took full advantage of the Anniversary Sale. All the groceries that families stock up on before school starts are on sale. If, like me, you are imagining the eleventy billion lunches you will make this year, then you definitely need to get there.
- 1 box, spice cake mix (3 eggs, 1/2 cup, vegetable oil, and 1 cup water for mix)
- 1/2 cup sugar
- 1/2 cup flour
- 1/2 cup Quaker Oats
- 1 Tablespoon, cinnamon
- 1/2 cup, caramel sauce
- 1 Tablespoon, sea salt
