I’ve had this everyday for the past week. And I still can’t get enough.
There’s so much to love here. Fresh ingredients. Quick & easy to make. Veggie cuisine at its finest. But hey, MorningStar Farm knows a thing or two about delicious meatless dishes.
You’ve tried Meatless Mondays, right? I know they’re a hit in my house. Gets me in the kitchen, trying something new, and makes veggies the star of the meal. It’s a fantastic idea for families.
You can even take the “Veg of Allegiance”, on the MorningStar Farms website, a pledge to go meatless for a number of meals that you select. Bonus— there are prizes at stake!
I’ve always been a fan of Greek salads. Well, all Mediterranean cuisine really, but especially Greek food. The first time I made Tzatziki sauce at home, I was blown away by how easy it was. Greek yogurt, cucumbers, and some fresh veggies, that’s it!
You can also add garlic, lemon juice… there are all sorts of variations. It all tastes so fresh!
Grill up the burger, top with sauce, and all the crunchy veggies.
I loved adding extra dill & feta cheese. You could use pepper, hot sauce, or even shredded mozzarella cheese. There are no rules here. Everyone can choose their own toppings!
Add some variety to dinner… meatless is SO delicious.
- 4 MorningStar Farms Chickpea Burgers, grilled according to package instructions
- 1/2 cucumber, chopped
- medium tomato, chopped
- 1 cup, feta cheese
- 4 burgers buns, bottom only
For Tzatziki Sauce:
- 1 cup Greek yogurt (I used non-fat)
- 1/2 half cucumber, julienned
- 1 Tablespoon, fresh dill
- 1 teaspoon, fresh lemon juice
