Fudgy Toffee Crunch Ice Cream Cake

Do I have a treat for you guys today! Our absolutely favorite, hit-it-out-of-the-ballpark Toffee Crunch Ice Cream Dream Cake. This cake is a party and it’s so easy to make.

The recipe is inspired by a movie we took my daughter to see recently- Inside Out. We loved the character “Joy” and this cake is happiness on a plate. Truly, your friends have never tasted anything like it. This isn’t your average ice box cake.

Layers and layers and layers of ice cream, hot fudge, whipped topping, graham crackers, and toffee bits. Needless to say, it creates a lot of joy in our house every time we make it.

Aside from desserts, I try to find little ways everyday to seek out and celebrate *joy* in our lives. A rainbow out the window, dance parties in the living room, using goofy voices when the kids are grumpy, or group hugs with my girls. Sounds corny, I know, but it’s so important. It’s easy to lose gratitude–especially when you feel like you’re being pulled a million different directions– without feeling a genuine sense that good things will (and do) happen in our lives on a daily basis.

I saw an interview a few years ago with Goldie Hawn and her daughter Kate Hudson. Kate was saying that joy has always been such a priority to her mother, and that it was really valued in their house growing up. I totally believed her. Listen, if anyone should be talking about joy, it’s these two. They always look like they’re beaming with happiness about simply being alive.

The bottom line is that kids need us to be role models for positive feelings, like joy. Their perspective of the world starts at home, and we owe to them (and ourselves) to look for and appreciate the little joys all around.

So I chose to get “Joy” as a lovie for my daughter after we saw the movie. Annnnd I got “Disgust” because Mindy Kaling is my role model*.

Fudgy Toffee Crunch Ice Cream Cake

Fudgy Toffee Crunch Ice Cream Cake

Yield: 15-20 servings
Prep Time: 10 minutes
Total Time: 10 minutes

Layers of caramel ice cream, hot fudge, whipped topping, graham crackers, and toffee bits in a frozen cake.

Ingredients

  • 1 box- graham crackers
  • 6-8 cups caramel ice cream, you can use many different flavors here. (dulce de leche, peanut butter cup, toffee crunch, etc.)
  • 1 container (6 cups) whipped topping
  • 10 oz. jar fudge topping
  • 1 toffee/chocolate bar

Instructions

  • Chop the chocolate into medium-sized bits, using a food processor or knife. Set aside.
  • Line the bottom of a 13x9” pan with graham crackers.
  • Use an offset spatula to spread half the ice cream over the graham crackers. Top with another layer of grahams.
  • Spread half of the whipped topping over the graham crackers.
  • Drizzle on half of the fudge over this layer. Sprinkle on the chocolate bar bits.
  • Repeat the layers (grahams, ice cream, whipped topping, and fudge sauce), adding the remaining chocolate bar bits on the top.
  • Freeze several hours until set.
