I’ve been meaning to make this one for a while. What goes better with Sriracha than cheese and carbs?
If I were still in college, I’m pretty sure this would be dinner every. night. Except, I’d be using the blue box Mac & Cheese, because who cooks in college?
These days, I get all fancy and make my own. The difference is huge. Taste-wise, that is. Time-wise, it’s pretty close to the bright orange cheese kind. Really.
I started out making a fancy cheese sauce with many pots, and realized that it was totally unnecessary. This can be as low-key as you want to make it.
I literally mixed together butter, cheese, and milk on the stovetop, in one pot. Yep, just like the boxed kind.
I didn’t even shred all the cheese. Just enough for the photo up there, and then chopped the rest into big chunks and tossed it in the pot. Done.
Comfort food shouldn’t be high-maintenance.
Oh and get yourself some nice cheese for this. Havarti is perfect. Shout out to Aldi again- they have tons of fancy cheeses for cheap*.

Next, you top the cheesy goodness with panko breadcrumbs. Please only panko, all others will turn to mush for the leftovers.
And then Sriracha (to taste!) as the finishing touch. I only put it on the adult portions, because my daughter was eating too. If you were making this for Sriracha fans, I would totally mix some into the cheese sauce too. Yum.
I first discovered Sriracha when I was pregnant with Bree (so like, a year ago). I was in my first trimester of pregnancy and dipping potato chips into hot sauce. I was convinced I was having a boy. Possibly college-aged, maybe already a member of a frat.
But no, just my sweet Brianna.
She’s almost one now, and I still love putting Sriracha on everything. Especially this.
