No one in my family is celebrating their birthday this week. We’re all summer babies.
When I first made these pancakes, it was August of 2013 and I was turning 32. (Wow. I’m almost to my mid-thirties. Wow.) They quickly became one of the most popular recipes on my blog. Everyone likes sprinkles!
They were delicious then, and they are still ahmaaazing now. Frosting for syrup? So fun. And funfetti is such a crowd-pleaser.
I was very proud of this recipe and its popularity, until last week, when I was organizing my archives and took another look at it. And was horrified.

They simply did not do this birthday treat justice. So I set out to reshoot these babies, and we had a delicious breakfast this weekend, frosting and all.
My daughter requested candles to blow out. How could I say no? So we sang happy birthday to her, a whole four months early. Ah well. A little spoiling is a-ok in my book. Especially if it means I get some sprinkle pancakes too.
