I used to have a love/hate relationship with my crockpot. About 1/3 of the meals I cooked in it were dishes that I wanted to eat again. Not a good track record.
But, as our family has grown, we’ve gotten busier–much busier–and I’ve been relying more and more on the ol’ slow cooker. I now have a respectable list of successful crockpot meals.
My absolute, favorite, tried & true, can’t miss recipes for the crockpot:
8. Chicken Tortilla Soup
Tips for Success:
-Use this conversion chart if you need to cook something at high vs. low (or forget to prep your meal in time, like someone I know…..)
-If your slow cooker bubbles over (maybe spits is a better way to put it? maybe not?), put a thick kitchen towel over the top.
-Use the right size crockpot for the job. Too small, and the ingredients won’t mix right; leading to dried out meat.
-On that same note, make sure you have liquid above and below the meat you are cooking. It’ll cook more evenly that way–and have better flavor.
-I’ve found crockpot liners to be a necessity. They help BIG TIME with clean-up, and are really inexpensive.
Any tips to share? I’d love to stay on good terms with my crockpot!
