I’ve been trying out new lunchtime dishes, focusing on healthy & quick meals, and this one hit the spot.
Not a fan of tuna? Try chicken salad. Boil up some chicken- or better yet, use rotisserie chicken-and mash up with some mayo.
I have to say, I much prefer regular mayo to light. Yes, yes, I know the calories are staggering, but light mayo just tastes too sweet to me. You know how they take out the fat and replace it with sugar? Meh.
I’d rather have the full-fat mayo and use less of it.
I’m not aiming to be anti-carb, I just find it more efficient to replace bread with veggies. So refreshing!
I need a lunchtime pick-me-up these days… my 4 month old, while still an “easy” baby, has become more needy. She’s getting smarter & more aware–especially of the fact that crying and fussy makes Mommy come running. Yep, we’ve reached that stage.
We’ve also been transitioning from the Rock ‘n Play (best baby invention EVER) to a crib, and she is not having it. My older daughter made the switch easily, because she was able to flip to her stomach, which made her feel cozy and safe. Brianna, my back sleeper, feels totally lost in the crib, and flails about angerly all the night long.
So I’m doing what a lot of moms do in tricky baby situations… I’m buying a product that promises to fix my problems. I saw this on “Shark Tank” and I’m waiting (impatiently) for them to get more in stock. Once we try it out, I will totally let you know how it works. Fingers crossed!
In the meantime, she’s back in the Rock ‘n Play. Womp. Womp. So let’s take things one day at a time, and try to eat healthier so we’re not breathing fire by the time the hubby comes home. Deal?
Makes three rolls
1 can albacore chunk white tuna (or chunk light, whatever your preference), drained
1/4 cup mayo
1 carrot, peeled and cut into strips (about 1/4″ thick and the length of the cucumber-see above pic)
1 cucumber, sliced horizontally into thin strips (about a 1/4 inch thick)
1. Mash up tuna with mayo in a bowl.
2. Lay out cucumber strip, place about 1/4 cup of tuna/mayo mixture at one end of strip.
4. Add about 5 carrot strips next to tuna.
5. Roll-up cucumber strip and enjoy!
