My daughter is a picky eater. For about a year when she was around 2, we struggled to get her to eat anything other than cereal. Struggled.
To this day, she is not a fan of anything beyond the carbs, dairy, & fruit food groups. I have a hard time judging her for this, since I was (and still am!) a pretty picky eater. But I try to get protein & veggies into my diet, because I’m a grown-up, and that’s the thing to do.
I tried all the usual picky eater solutions: smoothies, food with veggies pureed into them, those veggie/fruit pouches, etc. The girl’s taste buds are just too smart. She can sense a health food a mile away.
Until last week.
She’s been a fan of yogurt on and off throughout her (little) life, but it’s almost always the sugary kind. Regardless of the sugar content, I would encourage her to eat it, because protein is so hard to get into her diet. (Did I mention she hates meat? And, protein-filled whole grains, for that matter.)
But one day, I brought home some greek yogurt pops. For me. And she wanted some. Being the selfless mother I am;) I shared a popsicle with her. And then she practically ate the whole box over the next week.
So I said to myself, Alison, you can make these popsicles for a fraction of the cost. So I picked this up at IKEA, and bought a bunch of Dannon Greek Yogurt cups.
And then I bragged about the parenting win to my husband. She was eating yogurt: low sugar, high on protein. Yessssss.
I prefer to go the simple route and just take it straight from the container, but this summer I’m thinking about switching it up and trying some new recipes.

This would be a great alternative to those hot fudge ice cream cones, just to switch things up a bit.
Mango Lassi Popsicles
Ok, so these are probably more for me, but how gorgeous is this picture? And I love the ingredients: Greek yogurt, mango nectar concentrate, ground cardamom, crystallized ginger, chopped pistachios… yummm!
So will your family be making some homemade popsicles this summer? Maybe homemade ice cream? I’ve been dying to get a ice cream maker! For now, we settle for this method.
