Ok, disclaimer time. This is not fancy salsa. It doesn’t contain any trendy ingredients and won’t impress your friends at the neighborhood BBQ.

It IS super easy and a solution for my grocery bill.
And, more importantly, it’s tastier than store bought salsa.

I’ve done weight watchers on and off for years. And Sean decided to try it out this winter. Turn 30 & sit at a desk all day and your metabolism turns on you.
He lost 25 lbs, which is pretty darn cool. But it has meant some changes in the groceries. Instead of bags & bags of chips, he eats cut-up veggies and salsa every night. Basically, veggies and veggies. Zero points.
I was buying a large jar of salsa every few days. Couldn’t. Keep. Up. How ridiculous is that??
I was actually giving him attitude for finishing salsa too fast. Ick. I hate being that wife.
So I found a recipe for salsa online, tweaked it a bit and VOILA.
Tasty, cheap salsa I can make in massive quantities.

makes approx. 48 oz.
juice of one lime (I use a tablespoon and a half of the bottled stuff, either way works)
2 T sugar
2 cans of Rotel (one mild and one classic has the right amount of heat for us)
salt & pepper to taste
Cut up tomatoes into quarters. Cut 1/2 of an onion into two smaller pieces. Pulse in a blender or large food processor to desired thickness. Store in refrigerator.
