I’ve been trying to eat my veggies.
My friend Kari (hey girl!) started me on green smoothies. She got the idea from Green Smoothie Girl, but you can find plenty of recipes online, including from one of my fave bloggers, Angela of Oh She Glows.
I’ll share my own recipe someday, but for today I’m spotlighting one of my most successful recent attempts to eat more green stuff.
Like most of my favorite concoctions, it’s not TOTALLY health food. It’s got a couple winks to the junk food lover in me.
I threw this salad together one night, and woah. I loved it so much that I eat it most days for lunch. Easy, tasty, and doesn’t sit in my stomach like a rock. I’m looking at you, pizza.
few handfuls of spinach
red pepper, chopped
handful of tortilla chips, crushed
string cheese cut-up (can sub with mozzerella)
SW dressing: 1T ranch dressing, 1T salsa
Again, not intensely healthy, but super tasty and gets me eating some dark greens.
Also, it’s a texture bonanza. Eat up.
